Use the Ingredients tab to add ingredients, define your serving size for your base recipe, adjust your yield factor, and access item description information from the left pane.
Note: Any 400000 or 900000 CN Code numbers (for example, 400001 or 900038) on a menu, item, or recipe are local items and are not associated with the USDA CN Database.
1. Select a grade group from the Grade Group drop-down list.
2. In the Ingredients List section, click the + sign (Add Item) to add ingredients to the recipe. The Add Item screen appears.
3. Use the search filters to find an ingredient.
4. Select the ingredient and then enter the amount and measure in the Quantity Measurements section.
5. Use the Save & Add Another button until all ingredients are added.
6. Click Save & Close to save your entries and close the Add Item screen.
7. If necessary, adjust the Yield Factor for individual items to improve the accuracy of the nutritional information. This accounts for changes that occur during the preparation and cooking method impacting the nutrients and form of the ingredient.
EXAMPLE: 3 cups of raw, long grain, white rice yields 9.75 cups cooked
8. Enter information in the Serving Size section of the Ingredients tab:
• Portion*: Specify how much of the recipe will be served to one patron.
• Serving Description*: Describe the measure that will be used to serve the one patron. EXAMPLE: 1- Cup, 2- Tacos.
9. Click Next.
