Use the Nutritionals tab to view or edit nutritional information and moisture/fat changes for the whole recipe for the selected Grade Group.
You can run the Nutrient Composition report once you have entered your nutrient information (Reports > Standard > Inventory). Specify item types to include in the report by selecting an option from the Item Type field (Local, Local Attached to CN, CN, Discontinued CN, or All). Click Select Items to select which items to include.
1. View or edit the Nutrition Facts for the appropriate Grade Group. This information comes from the ingredient’s Nutrient Facts labels.
2. Enter changes in the Moisture/Fat section if preparation results in changes to weight or fat.
EXAMPLE: Pre-cooked chicken nuggets are fried before serving.
3. Click Next.
